Update json_api_client version #175

We're running on version 1.1.1, the latest release is 1.8.0 - https://github.com/JsonApiClient/json_api_client/releases

We saw a 50% increase in response times when updating to version 1.5.3 so this change we need to be load tested.

The gem has been updated to 1.5.3 to match the SHIFT deployment client gem. This will need revalidating by @shiftcommerce/infamouspandas to see if the performance issue still occurs.

If someone can get a front-end deployed with this version running, we can dig into the performance together - if it's that significant, hopefully we can see the issue without load.
