feat(nix): switch to official & maintained nix grammar #58

The grammar is currently being sourced from a repository that hasn't been updated in 9+ years, this PR switches the source to https://github.com/nix-community/vscode-nix-ide - the "official" Nix VSCode extension, which is frequently updated.
