Update dependencies to support PHP8 #159

I think this a good starter, on platform I saw at least one dep already bumped on trunk.

the thing is, that those dev dependencies need to be in sync with platform :see_no_evil:

This breaks the installation for me at the demodata step because there are still references to the old Classes (in this case bheller\ImagesGenerator)
