Hello,
I have exactly same model as you (Model, Bios etc...). I have Catalina opencore up and running. And wanted to try Big Sur.
I've followed this guide to prepare the usb drive: https://manjaro.site/how-to-create-macos-big-sur-11-0-1-usb-installer-for-hackintosh/
Once everything is done, I've replaced the EFI folder with yours.
Unfortunately, when I boot with the USB drive, I can not see the Big Sur Installation partition. I can see my Catalina Drive and the recovery drive.
If I boot normally with my internal Disk, I can see Mac Os Big Sur installation Drive. If I choose, I have a "no entry" sign and the PC stops.
Can you please help me ?

But When I boot with the drive, I don't have the Big Sur Entry
Dual booting right?
first delete the Windows folder in EFI.

I have a 12gb raw file. Can you please tell me how you can prepare this file for usb drive ?

Finished reimage with Etcher. But I am not able to boot with the drive EFI Folder is like the screenshot above. Did you boot with this EFI Folder or the folder from here: https://github.com/shuai620/NUC7i7BNH/tree/master/OC_0.6.3/EFI

Finally, the number is 0 to allow usb scan. It's working now. Installation finished. Now I am trying to use Intel wifi. Keep you informed. Thanks again for your help @enderaltin @shuai620
