feat: mobile styles, other minor tweaks

add custom.css for style overrides
- clean up some desktop styles (widen table width, cell padding, etc.)
- add mobile styles (stack table cells, hide header, add a primary color)
add placeholder for datatables search
format dates on pageload

(my IDE's prettier config made some updates )
