Is there some method to destroy the channels? If you cannot walk through them, and they cannot be destroyed, i can see a lot of trolling going on where players will block others into corners by digging trenches around them. May have even been your intention all along :P .

Builders would be able to fill in trenches.

Modifications for balance and competition:

Uncontested reservoirs act as potential respawn points for the player who owns them
The respawn rate of dead units is inversely proportional to how much a player is winning (player who is dominating will get units back slower)
Number of units a player has will never exceed some number
Units are able to attack other units
A reservoir is besieged whenever an enemy unit ends its turn on it, more units decrement the counter faster, friendly units will either slow or cancel the counter
Each player has an unconquerable home base, acts as an everlasting respawn point, can't annihilate enemy to win
Reservoirs and ice caps will span multiple tiles
