ci: Set `channels: %default-channels` #5

The GitHub mirror for Guix (https://github.com/guix-mirror/guix) was shut down, but guix-install-action uses that mirror by default. Override the channels input to use %default-channels without modification, so that the upstream Guix repository is used directly.
