Conda dependencies #54

Adding some dependencies and will see if openxlsx2 can be installed during the conda build process since it doesn't have a conda pkg. Also, vignettes needed to be .Rbuildignored.

Tested and the openxlsx2 pkg gets installed correctly during the build process - https://github.com/umccr/cpsr/actions/runs/9111301525/job/25048131910#step:4:1136 (this was uploaded to the umccr anaconda channel).
