If provider.versionFunctions is set to false (default is true) error is returned: Could not find output by name of "NAME_OF_THE_FUNCTIONLambdaFunctionQualifiedArn" or value from it to use version ARN

If versionFunctions is set to false in provider config you receive an error because QualifiedArn could not be get.

You could reproduce this behavior with this sample.yml

I am not aware of way where you could turn on function (lambda) versioning only for one function (lambda)

Lambda@Edge requires that you point to a version of a Lambda function. So, you can't disable versioning because then Lambda versions are not created.
