chore: update dependencies and remove underscore #95

All dependencies were updated to mitigate vulnerabilities with the exception of a moderate vulnerability in postcss that is a dependency of stylelint. This vulnerability will be patched when stylelint updates it's dependency on postcss.

In addition, the light usage of underscore.js has been converted to use vanilla js and the dependency on underscore was removed.
