Provide stats to help user choose the right factor to give polygon at 75th percentile c. 100 pixels

This will be implemented in the app so that the user can choose which set of rasters they use in prep_prep and after using the low res version can go back to use the high res ones. The Rmd will only have one every have one set, so we will need to consider how to remove the prep_resolution chunk once the user has gone back to use the high res ones.
