The simp-release RPMs should support Amazon Linux 2 #804

This probably means rolling an entire new set of RPMs for AWS2 but, at the moment, installing the EL7 version fails due to using $releasver in the repo files.

Currently, it appears that force-replacing the $releasever strings with 7 in the repositories functions properly.
