tap-gitlab requires a list of projects and does not appear to support requesting all projects

Some users would prefer that all available projects be replicated without having to specify the explicit projects that should be requested.

This would be especially beneficial in cases where projects are programmatically generated.

Hey, any progress on this? I can confirm that the docs specify that you dont need to give a specific project but you do have to.
