Legend in plots should show only those components that are included in plot #197

I fixed this already for plotSpectra() in commit 10d4cc38e3d537c75d5645eb34e0d6e748e2f3cc . At the same time also the handling of the background species should be standardised with how the other components are included in the data frame created for ggplot.
