(though, not a surprise since it's more likely related to macOS security)
IIRC: It used to be that running the downloaded or --cask
with a right click gave you the opportunity to okay the execution.
Looks like there is a workaround open it in the section entitled "If you want to open an app that hasn’t been notarized or is from an unidentified developer":

I have no idea how laborious it is to get GraphiQL in the notarized or recognized category; so wanted to do a bit here to track down info.
right click the app > open
you will then be able to bypass the warning
Whether you get the option to bypass depends on the security figuration of your machine.
Installing the app on Mac either through the DMG direct download or the
brew
target result in the following message appearing on app launch:OS: MacOS Monterey 12.6.7 Chip: M1 Pro
