I think replacing the spaces with hyphens will improve at-a-glance readability by making an obvious distinction between mixed fractions and multiple consecutive numeric values.
I made the original decision to use space-separated mixed fractions because that was the way we did it on our old site. It was an arbitrary decision, and one could argue that this is also arbitrary.
As I'm the person that is most closely tied to how the data will be used on the site and the visual impact of changes therein, I'm making the executive decision to switch to hyphen-separated mixed fractions.
I welcome any arguments to the contrary, but, for now, this issue will be closed pending my adjustments to measurement-related fields.
