Brainstormed this on Slack a little. Some thoughts:

We currently don't have any "value type" columns; that conflicts with the current selection/sort/filter column setup we have
Perhaps adopt the <input type> idea: <sl-grid-column type="number|date|string|etc">
Since selection/sort/filter columns extend the base column element, that is automatically inherited
If it get's too specific, we already have the renderer property
