Add some winning projects from the recent Chainlink Fall 2021 and Spring 2022 hackathons. Page: https://docs.chain.link/docs/example-projects/

How important it is?

Seeing the newer projects will help developers learn from the most recent Chainlink activities and keep up with projects as the industry progresses.

This is also a resource page that is shared frequently with partners.
