Un-`ignore ` `mdbook` code snippets #2750

As of https://github.com/awslabs/smithy-rs/pull/2027 we have mdbook test running against our design folder.

As a first pass it ignores all (but one) code snippets. We should go through each of them and, if appropriate, remove ignore and fix the code snippet.
