2 months ago I'm not even sure where you're getting "State" from, unless you modified the code. We use "Status" for that field, and whatever your status is is what would show up there.

What I don't understand is if I assign an asset, the status continues to say stock (In email notifcation)

When the asset assignment notification is sent by email, the status shows stock (it should say assigned). It only shows assigned when the asset is created and assigned from scratch.
