Also this is additional warning message:
2023-07-02 18:28:49.565 INFO snowflake.connector.connection: Snowflake Connector for Python Version: 3.0.4, Python Version: 3.9.16, Platform: macOS-10.16-x86_64-i386-64bit
2023-07-02 18:28:49.567 INFO snowflake.connector.connection: This connection is in OCSP Fail Open Mode. TLS Certificates would be checked for validity and revocation status. Any other Certificate Revocation related exceptions or OCSP Responder failures would be disregarded in favor of connectivity.
those errors seem to originate in pyarrow lib and looking at the list of packages you have installed, i'd try it with more current pyarrow version or without it (if you don't need it )
if you're looking for just using the connector, it looks like in your environment pip install trying to download the source code distribution and compile the code. I'm not sure why pip
choose to source distribution instead of the built distribution.
can you try forcing installing the built distribution with command pip install snowflake-connector-python --only-binary :all:
to prevent compilation?
if you're looking for to make the compilation pass, do you have arrows installed on your mac? I'm wondering if there's other arrow libraries installed on the mac, such that when clang tries to compile, it found multiple definition

Can you set logging to DEBUG and collect the logs?
