Issues #53, #54, #55

Updates the Newtonsoft.Json.dll library to version 13.0.1 – this should help with issue #53 which reported that version 13 was expected in assembly validation
Updates Demo and Tests projects to use the latest version within Unity 2021.x – 2021.3.12f1

Since the PR addresses multiple issue, I will rebase it on the release branch.
