[WIP] - nixOSTest reenable and interactive

Description of PR

Relates to: #596

Forgot to enable a few tests in the core nixOSTest. Additionally, would like to set the default eth0 interface to allow for port-forwarding within local qemu

Previous Behavior

• nixosTest running minus 2 ipv6 tests
• qemu interactive doesnt work with port forwarding because of the static IPs

New Behavior

• nixOSTest has all tests for core enabled
• qemu interactive works with port forwarding

Tests

• TBD - Still working through this but wanted to raise it up
