BLD: Update environment for binder #51

This gets binder working again. You can try this branch now at: https://mybinder.org/v2/gh/nkeim/trackpy-examples/fix-binder

We may want to tweak the environment a bit as we update the walkthrough. For example, we should probably include pillow since it makes a difference in gray values.
