feat: create PieceMapConverter & remodel GameState #374

Final changes to the GameState XML, I promise. We'll do a major bump anyways.

I am still not quite happy with the structure of lastMoveMono, but I guess that appears so rarely that it doesn't even matter.

Testing manually with build server and simpleclients works fine, though.

yes Testclient XML initialization has been weird sometimes...

Conclusion: XML is nicer, but the changes not worth it for this year.

I am now merging all interesting changes from this without touching the XML
