As discussed, uv is faster and more convenient to use than poetry, so let's change it early before it gets too cumbersome to do so.
Best to review this commit by commit as I also added a .gitignore file and removed python cache files from the repo. Kept my changes as backwards-compatible as possible, to make it easier to review and minimise workflow disruptions
