but haven't had any replies so perhaps this is the place to post my issue:
Google Spreadsheets converts dates from yyyy-mm-dd format to mm/dd/yyyy. I
suspect this is why I'm having problems with dates not being seen as such.

According to this page:

Exhibit wants dates in "2006-12-08", see ISO 8601 format
unfortunately GSS does NOT like dates in that form.
I have entered my dates as 'yyyy-mm-dd using the ' to quote the data.
Looking @ "raw" data I don't see the leading '

...but the quote is clearly visible in on my Exhibit page:
