Expose discoveryOverride in OIDCAuth #114

Is your feature request related to a problem? Please describe. In gloo Edge i can easily override the OIDC discovered setting with custom ones, using discoveryOverride in https://docs.solo.io/gloo-edge/latest/reference/api/github.com/solo-io/gloo/projects/gloo/api/v1/enterprise/options/extauth/v1/extauth.proto.sk/#oidcauthorizationcode

Additional context This is a blocker for portal workshops in instrutq, and in general a nice feature to import from edge.
