Is your feature request related to a problem? Please describe.

The upstream GW API v1.2 was officially cut yesterday: https://github.com/kubernetes-sigs/gateway-api/releases/tag/v1.2.0. This issue tracks the work required to ensure that Gloo is fully conformant with that new release and evaluate any net new features that we should adopt.

Describe the solution you'd like

• Bump the gateway-api library dependencies to v1.2
• Ensure that Gloo is fully conformant with the 1.2 conformance suite
• Evaluate any net new features that were introduced or graduated in the 1.2 release cycle
