expose access logs filter #5713

There are certain cases where we don't want to log headers or metadata because of the data sensibility.

We need to expose the filter on the access logs: https://www.envoyproxy.io/docs/envoy/latest/api-v3/config/accesslog/v3/accesslog.proto#envoy-v3-api-msg-config-accesslog-v3-accesslog

We might want to work on this feature request before.
