Improve websockets doc to add passthrough note and complete example #5876

Describe the requested changes

A user was trying to establish websockets support for the first time. Our websockets doc does not provide a complete example. In addition, they used a transformation in the VS. For websockets to work, any transformations in the virtual service needs to have passthrough specified as described in #4389. This note should be included in the doc as well.
