[WIP] Replicate Datadog integration and check for new changes #8918

Describe the requested changes

As per the Slack thread here https://solo-io.slack.com/archives/C9L6VPAUW/p1700080994874839

The user wasn't able to use Datadog to collect metrics.

They had enabled readConfig: true

The were seeing error's as such

I haven't had a chance to look into this, will try it out and update the docs with a PR
