Write output to file #13

This PR may meet the need identified in #11. I want to go ahead and merge it into master because:

Writing output to log file seems low-impact change, adds a small feature and does not change operation.
I also snuck in a change to action.yml so running the @master Action will use the :latest image from Docker hub.

Hopefully🤞 if anyone's running @master the sudden change won't be too much of a surprise.
