This is odd. Are you sure you're not using a resource pack or a server resource pack? My only other solution would be that the copy of vanilla minecraft that optifine installed off of corrupted somehow
This has been reported before. I believe it was something to do with outdated / broken drivers. So you can try re-installing them or updating them. I believe a user had this issue also and it was because they were using Windows 7. Weird issue.
No matter how I install Optifine for 1.17.1, using any of the versions I've tried(U_G9, U_H1_pre3), it has caused an issue that textures fail to work properly, on the main menu, on the loading screen and in-game. I don't try anything special, and I've uninstalled my minecraft to see if I can get it to work with no results. I've tried it with fabric, forge, and the standalone installer, with no proper results.
All I do to cause this mod is install and/or open a minecraft version with Optifine installed.
The version I used was U_G9 and U_H1_pre3, which while both got me bad results, in fabric, U_H1_pre3 was not detected or usable with it.
As to how I installed them was placing the files in the mod folder, the standalone installer and extracting it into the mods folder too.
Forge 1.17.1-37.0.71 Fabric 0.4.7
OptiFabric 1.11.20
On Fabric it's with the FabricAPI, but on forge there were no other mods.
The bugs did not occur on my vanilla minecraft, and when Fabric or Forge didn't have Optifine.
