Decided on TSL2561 which communicates over I2C.

3 TSL2561 devices can be addressed on a single I2C bus, so two I2C buses will be needed. Added second I2C bus to mainboard schematic and pinout: https://github.com/spacecraft-design-lab-2019/avionics-motherboard/commit/6a2f9574f7eecfab56c8625549833521ab267ce2
