fixed typo in variable name

Thank you for bringing this up!

What this was missing is:

fixing references to these variable name (there are some in group_vars/matrix_servers)
updating documentation in docs/ and CHANGELOG.md
adding automated detection for people who are using the old variable names, so we can point them to the new variable names
