Bump version to 5.1.0 to support Spark 3.2 #111

Bump version for the changes below:

Make manifest file path use s3a/n scheme
Add catalyst type mapping for LONGVARCHAR
Upgrade to Spark 3.2
Fix log4j-apt compatability with Spark 3.2

hello, I can't find 5.1.0 version on mvn central, could you upload it or is it somewhere else ?

@AlixMetivier sorry for the delay. I have currently released this version to be forked for any usage. I can get it released to Maven Central before Wed, 10/05.

@AlixMetivier I was able to prioritize it today. It should be available on Maven Central anytime from now. Let me know if you still faced any issues.
