Update most dependencies -> latest #120

Only react-router-dom couldn't be upgraded to v6 as I currently leverage Redirect and Switch elements and their proper replacements did not work correctly. https://github.com/remix-run/react-router/blob/main/docs/upgrading/v5.md#remove-redirects-inside-switch
