Port sphinxcontrib-rextheme to v2 #57

Previous conf.py:

html_theme = 'rex'

Looks abandoned, but has moved to https://github.com/prometheusresearch/sphinxcontrib-rextheme this year. Maybe more to come?

OK, this doesn't seem to work.

entry_points uses rextheme, but the theme directory is called rex. I would consider this "broken".
