To summarize, this PR basically bumps all the SUI versions

Also fixes an issue with the python3 test that broke due to changes in collections in 3.10

Looks fine to me, didn't have time to test it tho (it's a bit of a hassle to test atm with splunk enterprise not working on apple silicon 🤦)
