This is the Epic issue around replacing the functions currently defined in this project w/ the functions in the newly introduced Spring Functions Catalog repository.
High level items
CI updates
The build/CI must be modified to support consuming the functions from the other project rather than inline as they are currently.
Convert functions
Each of the functions that is consumed in the project needs to be converted into auto-configuration in the new spring-functions-catalog project.
TODO: Add list of steps here based on one of the converted functions
