Remove Docbook from our document production and use only Asciidoctor to generate PDF.

Thanks for the PR! The workaround fixes the build, but there are other cases where there are classpath errors. Ultimately, we needed to update to the latest version of the Asciidoctor Gradle plugin. I created gh-66 which supersedes this issue
