Remove the unused ClinicService #1

Hi Nils,

I've installed your new app and it rocks! Congratulation :-) I don't known GraphQL. So I look into the Java code to understand how it works. It seems that both classes of the service package are not used. Thus I've deleted them and I've refactored the tests).

There is still a lot of improvements / clean up. So if you have more ideas, feel free to implement :)
