Rework CI to trigger executions within each module

This change:

Triggers the workflow of each module only when files within the module are modified
Allows the workflows to be executed on any branch and not only on main (useful for PRs)
Updates the badges in the README to reflect the status of the main branch only
Aligns the workflows style and action versions
