Add `umap_list()` and `umap_plot()`

Add hai_umap_list() and hai_umap_plot()

alias all kmeans and umap as they are currently named in healthyR so that the only change in workflow for a user would be loading healthyR.ai and not healthyR for this particular set of tasks.
