For UI-5187

Bump deployment target to iOS 15.0 from iOS 14.0
Update demo project to recommended Xcode build settings
Update changelog and podspec summary
Disabled Xcode project user script sandboxing
- This is a new build setting but the Cocoapods integration doesn't play nice with it at the moment. Related to https://github.com/CocoaPods/CocoaPods/issues/11946
