docs: improve documentation of COMMIT_STATS and COMMIT_FILE_STATS #896

Adds documentation for version function along with the returned format.
Adds examples for COMMIT_STATS and COMMIT_FILE_STATS.
Adds section about how to use COMMIT_STATS and COMMIT_FILE_STATS and their output shape.
