Fixed typos and updated wording in the engineering guide #370

Updating wording to make gender-neutral references to engineering roles and fixed a couple of simple typos.

I rushed a bit with these changes before setting up a proper signature (DCO) and removing redundant commits - wanted to clean it up and resubmit to adhere to your engineering guidelines.
