Normalize use of diacritics on Estrangela and Peshitta

We will want to normalize how we use the diacritics coming from Wright. First case to deal with, given its ubiquity, is "Estrangela"

To start, we want to write a regex that will find all forms of the string as used in Wright. Then we can decide the final form we want to use and batch update.

We also want to do the same for Peshitta. Other cases we are leaving to our proofreaders to mark and will be addressed on an individual basis
