psychopy -> PyQt6 #243

Latest release of psychopy uses PyQt6.

This breaks the CI tests, need to:

check if it also breaks functionality
update our pyqt code to work with both PyQt5 & PyQt6
- maybe we remove our explicit PyQt5 dependency and just use whatever psychopy installs?
- then can use this to keep the code simple: https://pypi.org/project/QtPy/

Note: we should also include a pinned older version of psychopy in CI which uses PyQt5 to ensure we don't break existing installations when they upgrade vstt.
